  5.                Sen. Barry Goldwater's Expert Chili

  8. 1 lb    coarsely ground beef
  9. 1 lb    dried pinto beans
  10. 1 can   (6oz) tomato paste
  11. 2 c     chopped onions
  12. 3 T     hot unspiced chili powder
  13. 1 T     ground cumin
  14. salt
  15. water

  17. Soak beans in water , covered overnight. In a large Dutch oven, cook
  18. beef until browned, stirring to keep crumbly, Drain off drippings, if
  19. needed.

  21. Add tomato paste, onions and drained beans.
  22.  
  23. Mix chili powder, cumin and season to taste with salt.Stir into
  24. mixture.
  25. Bring to boil, reduce heat, cover and simmer until beans are tender,
  26. about 5 hours.
